Gluten Free, Dairy Free Option

These Corn Fritters are rich in fibre, vitamin C, B6, and minerals such as potassium, supporting digestion, immune function, and heart health. Made with high protein chickpea flour, these fritters are gluten free, and are a delicious and nutritious way to incorporate plant based protein into your diet. The combination of natural sweetness and crunchy texture make these a perfect choice that can be enjoyed either hot or cold. Serve with a fresh batch of guacamole for an extra wow factor!

Serves 6

INGREDIENTS

  • 2 cobs of corn, kernels removed
  • 1 large potato, peeled and grated
  • 1 large organic egg
  • 1/2 cup of besan flour (chickpea flour)
  • 1/3 cup of grated parmesan cheese or nutritional yeast flakes (dairy free option)
  • Pink salt, black pepper and dash of chilli
  • Olive oil for frying

METHOD

  1. Buzz the corn kernels in a blender first but still leave them a bit chunky.
  2. Combine all the ingredients above, except olive oil in a bowl.
  3. Spoon tablespoons of mixture into hot oil in fry pan, flatten & cook gently on both sides until golden and crunchy.
  4. Serve topped with easy homemade guacamole..
