These healthy brownies will keep you nourished while satisfying your craving for a sweet treat. These brownies are filled with Vitamin rich nutrients such as Vitamin A, C and high fibre from the sweet potato, healthy fats and fibre from the nut butter and almond meal and calcium, magnesium and iron goodness from the raw cacao. They are super moist and delicious!
INGREDIENTS
(Makes around 12-16)
- 1 cup of sweet potato puree (from 1 medium sweet potato)
- 1 cup of natural peanut or almond butter
- 2 teaspoons of pure vanilla extract
- 6 tablespoons of almond meal
- 1/3 of a cup of vegan chocolate chips (optional)
- 1/2 of a cup of organic coconut syrup or maple syrup
- 6 tablespoons of raw cacao
- 2 teaspoon of baking soda
- 1/2 of a teaspoon of pink Himalayan salt
METHOD
- Peel and steam sweet potato until very soft.
- Pre-heat oven to 180 degrees and grease a small square baking tray.
- Mash the sweet potato and in a bowl mix with all the other ingredients.
- Spread into the prepared tin.
- Bake for around 15-20 minutes. They will still be a bit soft in the middle.
- Cooking times may vary depending on the oven. Allow to cool completely.
