Ingredients

• ½ a cup of raw pistachios
• ½ a cup of almond meal
• 1 cup of shredded organic coconut
• 2 heaped teaspoons of Tropeaka Organic Matcha Powder (use discount code: GLOWFROMWITHINNUTRITION)
• 1/3 of a cup of raw honey or organic maple syrup
• ¼ cup of organic coconut oil melted
• 1 teaspoon of pure vanilla extract

Topping

Vegan dark chocolate for melting

A few extra pistachios, chopped to sprinkle on top

Method

1. Add pistachios, almond meal, coconut and matcha powder to a blender. Blend for around 1 minute.
2. Transfer to a bowl and add honey or maple syrup, vanilla and melted coconut oil.
3. Mix together and refrigerate for around ½ an hour to set a little (if you can wait that long!), or simple start rolling.
4. Roll 1 tablespoons portions into balls.
5. Drizzle with melted dark chocolate and sprinkle with extra chopped pistachios.
