INGREDIENTS
Chocolate Crunch Layer
- ½ cup coconut sweetened condensed milk
- ½ cup chilled organic coconut cream
- ⅓ cup GoodMix Bliss Ball Mix
- 1 tsp vanilla bean paste
- 1 tbsp organic liquid sweetener such as Agave Syrup - optional
Fruit and Nut Layer
- ½ cup coconut sweetened condensed milk
- ½ cup chilled organic coconut cream
- ½ cup GoodMix Blend 13 Mix pre-soaked and activated
- 1 tsp vanilla bean paste
- 1 tbsp organic liquid sweetener such as Agave Syrup - optional
Greens Layer
- ½ cup coconut sweetened condensed milk
- ½ cup chilled organic coconut cream
- 1 tsp GoodMix Greens+Aloe
- 1 tsp vanilla bean paste
- 1 tbsp organic liquid sweetener such as Agave Syrup
METHOD
Chocolate Crunch Layer
- Beat the chilled coconut cream until fluffy. Add the sweetened condensed coconut milk and beat until thick – around 2 minutes.
- Stir in the GoodMix Bliss ball mix, vanilla and sweetener and pour into a lined loaf tin (approx. 18 – 20 cm long).
- Place into the freezer overnight to set.
Fruit and Nut Layer
- Beat the chilled coconut cream until fluffy. Add the sweetened condensed coconut milk and beat until thick – around 2 minutes.
- Stir in the GoodMix pre-soaked Blend 13 mix, vanilla and sweetener and pour over the frozen Chocolate Crunch Layer.
- Place in freezer overnight to set.
Greens Layer
- Beat the chilled coconut cream until fluffy. Add the sweetened condensed coconut milk and beat until thick – around 2 minutes.
- Stir in the GoodMix Greens+Aloe, vanilla and sweetener and pour over the Fruit and Nut Layer.
- Place in freezer overnight to set.
- Remove the Cassata from the loaf tin and decorate with a sprinkling of GoodMix Bliss Ball Mix, some chopped pistachios or organic fresh seasonal fruit as desired.
- *Serve frozen and store in the freezer
