High Protein Low Carb Coconut Pancakes
DRY MIX
¼ cup of COCO EARTH Organic Coconut Flour
½ teaspoon of baking powder
Sprinkle of pink salt
WET MIX
1/3 cup of organic Almond Milk
2 organic eggs beaten
1 tablespoon of COCO EARTH Liquid Coconut Oil
1 teaspoon of pure vanilla extract
2 tablespoons of pure organic maple syrup
FOR COOKING
2 tablespoons extra of COCO EARTH Liquid Coconut Oil for frying
FOR SERVING
Organic Coconut Cream
Organic Banana
Organic Ceylon Cinnamon
Raw Organic Honey
Toasted Organic Coconut Flakes
METHOD
Whisk dry ingredients in a small bowl.
In another bowl mix the wet ingredients.
Combine wet and dry ingredients and mix with a hand beater to achieve a pancake batter.
Heat 2 tablespoons of COCO EARTH Liquid Coconut Oil in a non-stick pan.
Pour ¼ cup of batter into the pan. Cook slowly on one side for 1 minute, flip then cook other side for 30 seconds.
Repeat until all the batter has been used.
Serve your pancakes with organic coconut cream. Banana, cinnamon, toasted coconut flakes & raw honey.
