This wonderfully rich tomato based sauce brings all the aromas of an Italian kitchen and the benefits of the Mediterranean diet with its simple fresh ingredients that come together quickly. It is perfect as a pizza base topping or tossed through pasta. Add a tin of tuna and you have another simple Italian Tuna Sauce that mixes beautifully through cooked spaghetti.
INGREDIENTS
- 4 large ripe tomatoes chopped into cubes.
- 1 bunch of basil (leaves only).
- 1 garlic clove finely chopped.
- 1/3 of a cup of Extra Virgin Olive Oil.
- 1 -2 teaspoons of chilli flakes (optional).
- 1 teaspoon of pink salt & freshly cracked black pepper.
DIRECTIONS
- In a large frypan, add the olive oil. When warm add the chilli flakes then the cubed tomatoes. Add salt and black pepper. Cook gently for 15 minutes.
- Add the finely chopped garlic and stir for 1 minute.
- Add the finely chopped basil leaves and stir through for 1 minute.
- Remove sauce from the heat.
- Use this sauce as a pizza base topping or stir through cooked pasta
