INGREDIENTS
- 1 medium sweet potato cooked in its skin
- 1 large ripe banana
- 3 tablespoons of raw cacao
- Splash of pure vanilla paste
- 1/3 cup of raw honey or organic maple syrup for the vegan version
METHOD
- Roast the whole sweet potato in its skin until really soft and caramalised (around 40 minutes in the oven or 20 to 30 in the airfryer).
- Once cooled, peel and add to the blender with all the other ingredients.
- Blend until smooth.
- Spoon into molds and freeze for several hours or overnight.
- Store and serve from freezer.
