These refined sugar free bliss balls contain the antioxidant goodness of vitamin A rich carrots combined with high fibre medjool dates, healthy fats and calcium from the pure almond butter and a dose of gut healing bacteria contained in the raw honey. These delicious treats can be enjoyed as part of a healthy balanced meal plan.


INGREDIENTS

(Makes around 15)

  • 1 medium carrot peeled and grated
  • ¼ cup of pure almond butter
  • 1 tablespoon of organic raw honey or organic maple syrup for vegan option
  • ½ cup of desiccated coconut plus extra for rolling
  • 1 cup of pitted Medjool dates
  • Pinch of salt, dash of pure vanilla paste and 1 teaspoon of cinnamon

METHOD

  1. Combine all ingredients into a blender and blend until the mixture comes together.
  2. Remove from blender and roll into small balls, then in extra coconut if desired.
