Enjoy these healthy zucchini fries as a snack or side to your favourite meal! Avoid the sugar high and saturated fats you get when consuming regular potato fries. They turn out crunchy, crispy, spicy, nutty and delicious. They’re filled with fibre, vitamin C, healthy fats, magnesium and potassium, keeping you fuller for longer while also boosting your immune system for the cooler months.
INGREDIENTS
3 medium zucchinis washed and sliced into fat chips
1 tablespoon of sweet paprika, 1 tablespoon of dried oregano, 1 teaspoon of pink Himalayan salt and 1 teaspoon of white pepper
2 tablespoons of besan (chickpea flour) – SECRET INGREDIENT TO GETTING THAT EXTRA CRUNCH AND FLAVOUR
2 tablespoons of macadamia oil
METHOD
Preheat oven to 200 degrees (Celsius)
Lay sliced zucchini in one layer on a lined baking tray In a small bowl mix the spices and besan flour
Sprinkle the spice mix over the zucchini chips
Drizzle with the macadamia oil
Bake in a hot 200-degree oven until golden and crunchy (20 – 30 minutes depending on your oven) or cook batches in the air fryer.
Enjoy hot with a drizzle of lemon juice and homemade garlicky aioli for extra flavour and immune boosting properties.
